Moroccan Meatballs in a Tomato Sauce
There’s
nothing like the smell of mom’s cooking before a family gathering.
It’s the smell of the holidays, of coming together, a feeling of
family tradition that wraps you in its warmth.
The
table is set, and every feels that the time has finally come to
relax.
Finally,
the Moroccan meatballs are served, and you already know that there
won’t be enough!
Ingredients:
Meatballs:
1
kg minced meat `
Onion,
coarsely chopped
1
small potato, finely grated
Bunch
of parsley
2
eggs
½
teaspoon cumin
1
teaspoon salt
Pepper
Sauce:
4-5
fresh tomatoes
1
tablespoon sweet paprika
4
crushed garlic cloves
1/4
cup oil
1
teaspoon spicy Paprika
1/2
teaspoon turmeric
Pepper
Salt
1.25
cups of water
2-3
crushed tomatoes
Preparation:
In
a bowl put all of the ingredients for the meatballs (not the sauce).
Prepare
meatballs, and fry well in a pan with oil.
In
a large pot heat ¼ of a cup of oil. Add diced tomatoes, garlic and
the spices. Cook well for 3-4 minutes.
When
the sauce looks ready, add the meatballs.
Immediately
after, add 1.25 cups of water, and bring to a boil.
Cover
and simmer of a low flame for 20 minutes.
