Pickled
lemon is a staple oriental spice which has already gone global.
A
simple delight which will be a huge upgrade to your personal kitchen.

Ingredients:
3
medium lemons
Juice
of one lemon
½
cup coarse salt
1
teaspoon sweet paprika
Half
a teaspoon of sugar
½
teaspoon ground pepper
2
bay leaves
Ground
thyme
Olive
or canola oil
Preparing
the jar:
Because
the jar must be sterile in order to prevent the accumulation of mold
and bacteria, it must be heated in advance for half hour in an oven
preheated to 180 degrees C.
Cut
the lemons into thin slices and remove the seeds.
In
a medium bowl sprinkle salt, shata pepper, paprika and sugar.
Dip
the lemons into the bowl and coat on both sides. Shake off the
remaining salt. Try to touch the lemon as little as possible with
your hands.
Arrange
the salted lemons in the jar in layers. Place the bay and thyme
leaves on the sides.
In
the middle of the jar, continue to fill and compress with a few
slices of lemon.
Place
the jar in a dry place for a day.
The
next day, add the squeezed lemon juice to cover the lemons, as well
as about a tablespoon of oil.
Close
tightly and leave three more days. Be careful to shake the jar every
day.
Very
important: To make sure that mold and bacteria don’t develop,
use a clean fork and/or clean hands.
