Warm Chocolate Soufle

This dish can’t help but arouse warm feelings and wide smiles.

Ingredients:

200 grams dark chocolate
200 grams butter
1 teaspoon vanilla extract
½ cup of sugar
2 eggs + 4 egg yolks
1 ½ teaspoons coffee liquer
50 grams flour (about ½ cup)
Powdered sugar
Fresh raspberries

Preparation:

Melt the chocolate, butter and sugar on top of a steam cooker.
In a separate bowl, manually whip the eggs, egg yolks, coffee liqueur and vanilla extract.
Pour a small amount of the chocolate mixture into the egg mixture and whip well (this is done to prevent coagulation).
Add the flour and mix until completely even and smooth. Pour into utensils made for souffles.
Bake for 20 minutes in an oven preheated to 200 °C (392°F).
Decorate with powdered sugar and serve warm with a fresh raspberry.
